Heres the recipe for the beer soup
1/2 cup of butter (salted or unsalted. i use salted)
1 leek cleaned and thinly sliced
1 Carrot peeled and cut
1 stalk of celery
salt and pepper
1/2 all purpose flour
1/2 teaspoon of dried mustard
4 cups of chicken broth
1 bottle of newcastle beer
2 cups of sharp cheddar cheese
1/4 cups of parmesan
1 pinch of cayenne pepper
1 teaspoon worcestershire
2 table spoons of parsley
(i usually cut up 2 cups of carrots, leeks and celery, just to have more veggies in the soup... you can also add potatoes if you like, i usually add one)
in a large saucepan over medium heat, melt the butter. add leek, carrot, and celery and saute until softened, about 10 mins. season with salt and pepper
stir in flour and dried mustard until incorporated and cook for about 1 minute. add the stock and ale and bring to a simmer over high heat. reduce heat to medium and cook, whisking to break up any lumps of flour, until mixture is slightly thickened, about 5 mintues. add the cheese and whisk constantly until nicely melted, 3-5 mins longer. do not let boil. stir in the cayenne and worcestershire sauce, taste and adjust the seasoning.
and thats it!
This sounds so good. I may delete the beer though. I remember my dad used to make beer pancakes.
ReplyDeleteyou can if you want, but i find the beer gives it the taste.. i myself dont like beer, but when cooked it tastes yummy :D
